Halloween Gingerbread Whoopie PiesThese little spooky whoopie pies are a real fun treat. Decorating them with candy eyes really makes these cookies look extra kooky. I did this Halloween activity with my kids. They had fun rolling the edges in sprinkles and adding the little candy eyes.

I used this gingerbread whoopie pie recipe from James Beard. https://www.jamesbeard.org/recipes/gingerbread-whoopie-pies

I split up my filling into separate bowls and used green and orange food coloring. I think purple would be another great Halloweeny color you could use. Beware that if you use too much liquid food coloring, it will water down your filling and make it a little bit runny. Using gel food coloring might be better for this. After adding the filling to the pies it is best to chill them.
